Chicken Garlic Butter Pasta!

Who needs an idea for lunch or dinner? We all do right? My kids love pasta and its a pretty cheap meal. I threw this together one day just trying to use what I had in the fridge/cabinet. It came out great and the kids loved it! Since I just threw it together I had to do it a few more times to put together a more accurate recipe. I finally got it together.
What you will need:
1pack 12oz. spaghetti noodles
5 to 8 chicken tenders
2 to 3 Tbsp minced garlic
1 Stick butter
2 Tbsp parsley
2 Tbsp olive oil
1 to 2 Tsp lemon juice
salt and pepper to taste
Chicken fajita seasoning to taste

I used leftover chicken tenders or just bake some more. I always use at least 1 tender per person or if your a meat lover like my husband use 2 per person. You can cook the chicken ahead of time, use canned chicken or whatever is easier. I baked the chicken tenders in a casserole dish with vegan butter and chicken fajita seasoning. Cut them into cubes and set them aside.
Ok, lets start with pasta. I use gluten free spaghetti noodles. It doesn't matter which kind you use. No matter what kind of pasta you use always put olive oil in the water before you put your pasta in. It keeps it from sticking together. Bring water to boil then add pasta.
While your pasta is cooking start on the sauce. Melt one stick of butter. I use
, but it doesn't matter what you use. Add the garlic, parsley, and lemon juice 1 tsp at a time, salt and pepper to taste. I use
set it aside till noodles are done.
When the noodles are done get at least 1 cup of pasta water out before draining. Then drain the noodles. After draining them put the butter mix in and stir. To make it a bit creamier add some of the pasta water. Do not dump the whole cup in at one time. Stir then check to see if it needs it then add more. Add as much or little as you want. Add and stir in the chicken in also. If you feel it needs more flavor just add some more chicken fajita seasoning or
Then ENJOY!! Since we are pretty well dairy free I do not put any cheese or anything on it, but you can easily add parmesan or mozzarella for added flavor.
